​Hatch Green Chile Beef Enchiladas

​Items Needed:

3-4 lb. Beef Roast (or Chicken)

2 1/2 Tbsp Classic American Hatched
-
2 1/2 Tbsp Classic Sazón
-
1 Jalapeño Pepper
-
1 Onion (medium)
-
2 Roma tomatoes
-
2 Tsp Garlic (diced)
-
1 Green Chile Enchilada Sauce (28 oz can) – red sauce optional
-
2 Hatch Diced Green Chiles (4 o can)
-
Corn Tortillas (or flour)
-
Mexican Blend Shredded Cheese (1 lb.)
-
Light Sour Cream (optional)
-
Cotija Grated Cheese (optional)
Prep & Cook:

Cut meat into chunks. Season meat on all sides and rest overnight in the refrigerator. Save 1/2 Tbsp of each Classic American Hatched and Classic Sazón for later.

Boil chunks of beef with diced jalapeño, onion, tomatoes, and garlic in pot with 7-8 cups of water.

Let the beef cool, shred, add diced Hatch green chiles, heat up in juice left from boiling. Add 1/2 Tbsp of Classic American Hatched and Classic Sazón.

Heat up 6-8 tortillas. Cover one tortilla on both sides with green chile sauce, add shredded beef, a spoon of green chile sauce, and cheese. Roll and place it in a pan.

Fill pan with enchiladas. Add green chile sauce on top, add any extra shredded beef, and smother with shredded cheese.

Bake in oven at 425 degrees for 20 minutes. Bake for a final 10 minutes at 450 degrees.

Add sour cream and Cotija cheese. Serve.

BBQ Pork Egg Rolls

Items Needed:

8 oz shredded cheddar cheese
-
Pimentos
-
Mayonnaise (a few spoonfuls)
-
Equal amounts pulled pork
-
Eggroll wrapper
-
Dad’s Seasonings - Sweet BBQ Rub & Classic Sazón
-
Non-stick spray or oil on a rack
Prep & Cook:
-
Mix 8 oz of shredded cheddar cheese, pimentos and mayonnaise (let sit for about 1 hour).
-
Mix the pimentos cheese with BBQ pulled pork.
-
Use 1/3 cup of filling on an eggroll wrapper.
-
Wrap it well and tight to minimize leaks.
-
Makes about 10 eggrolls.

Cook at 400 degrees for about 20 minutes.

Last few minutes spray the tops and sprinkle on seasoning.
Nica BBQ Crispy Fried Chicken Sandwiches

On a beautiful Saturday & relaxing, did some crispy fried chicken sandwiches on my @webergrills. I got an eight pack of chicken breast cleaned up, washed them, trimmed them, pounded them, and soaked them in some buttermilk & hot sauce for 3 hours. Then I dredged them in a flour mixture seasoned with @dadsseasonings (Nica BBQ) and gave it some flavor.
Then used to the @cuisinelcastiron skillet that really holds up heat . At the end of the cook, I laid out some #swisscheese and again seasoned them with @dadsseasonings (Nica BBQ). My sides were #airfryer, #frenchfries with #cheddercheese and homemade #bbqdippingsauce. Enjoy BBQ fam.
Chile Dulce Grilled Chicken Wings

Prep Time: 10 Mins | Cook Time: 25 Minutes
Items Needed:

Whole Chicken Wings: 8-10

Olive Oil Binder: to taste
-
Certified Sazón Seasoning: to taste
-
Dad’s Chile Dulce Seasoning: to taste

Grill, fire starters & torch
-
Lump Charcoal & Mango Smoking Wood
Prep & Cook:
-
Fired up the grill to about 450° with lump charcoal & mango smoking wood.
-
Coated Chicken Wings with Olive oil for the binder & seasoned them with my Certified Sazón seasoning blend & Dad’s Chile Dulce Seasoning.
-
Placed on the grill and cooked for about 25 minutes.
-
Remove & Enjoy!
Grilled Ribeye Steaks
