Greek Lemon Chicken

Dad used chicken quarters.

Use your favorite chicken.

Ingredients: chicken, olive oil, lemon, Greek or Italian seasoning, and extra salt is optional.


NOTE: Dad made a homemade Greek seasoning blend. Added Kosher salt. Our Italian seasoning works well too!


Squeeze a fresh lemon over the chicken, drizzle some olive oil, and add seasoning to taste. Let it sit in the refrigerator uncovered for a few hours.

Grill: Dad grilled this on his Kamado Joe using B&B oak lump charcoal.

Greek Cabbage Salad

Ingredients:

  • 4 cups cabbage (finely shredded - green, purple, red, or mix)

  • 1 carrot finely shredded (Dad chopped into small pieces)

  • 1 Tbsp of parsley finely shredded (optional, Dad added some dill weed)

  • Greek or Italian seasoning to taste (extra salt and pepper to taste)

  • 3 Tbsp extra virgin olive oil

  • 1 tsp of white vinegar

  • 1 to 2 Tbsp of plain Greek yogurt (optional)


Instructions:

Shred cabbage, shred or chop carrot, chop parsley. Mix olive oil, vinegar, and seasoning.

Add all ingredients and chill.

Greek Lemon Rice

Ingredients:

  • 2 cups of rice

  • 2 Tbsp of olive oil

  • 1 small onion finely diced

  • 3 garlic cloves finely diced

  • 24 oz of chicken stock

  • 1 Tbsp of dill weed

  • 1 Tbsp of parsley finely chopped

  • 1 fresh lemon squeezed

  • Greek or Italian seasoning to taste


Instructions:

Soak rice in water for 20-30 minutes.

Heat olive oil, onions and garlic until translucent.

Add rice and stir until toasty.

Add the chicken stock, vegetables, and seasonings, and boil. Cover and simmer for about 15 minutes.

Baked Zucchini Fritters

Ingredients:

  • 2 zucchini small, grated (drain water)

  • 1 small red onion

  • 3 galic cloves finely chopped

  • 1 egg

  • 1 tsp of dill weed finely chopped

  • 1 cup of almond flour

  • 3 oz feta cheese

  • 2 oz Pecorino cheese (substitute Parmesan)

  • Greek or Italian seasoning to taste (optional, add salt & pepper)


Instructions:

Preheat oven to 375 degrees.

Sautee onion and garlic until translucent. Let cool.

Combine grated zucchini, seasonings, cheese, egg, and almond flour.

Add small patties on baking tray lined with baking paper.

Bake for 10 minutes on each side. 10 minutes flip and 10 additional minutes.


Tzatziki Sauce:

Mix 2 cups of plain Greek yogurt and spices to taste. Add diced cucumbers. Seasonings: Greek or Italian seasoning blend, dill weed, parsley, salt & pepper, and lemon juice to taste.


Greek Lemon Potatoes

Ingredients:

  • 4-5 potatoes peeled

  • Greek or Italian seasoning blend

  • 1 lemon

  • 1/2 cup olive oil

  • Salt & Pepper to taste


Instructions:

Preheat oven to 350.

Cut potatoes length-wise for wedges.

Place potatoes in a single layer on the pan and wipe the pan with oil.

Squeeze lemon juice over potatoes. Drizzle potatoes with olive oil. Season potatoes to taste.

Cook for 45 minutes to 1 hour. Dad cooked his potatoes for 1 hour.

Serve immediately.
