Dad’s Island Pork Katsu Sandwich

Crispy on the outside, juicy on the inside, and loaded with flavor. Dad’s Island Pork Katsu Sandwich puts a tropical twist on a Japanese classic using Dad’s Asian Fusion or Island Umami Seasoning.
Ingredients
Pork or Chicken
Thin-cut pork loin (tenderized if needed) or
Boneless, skinless chicken breasts or thighs (tenderized if needed)
2-3 tbsp Dad's Seasonings Asian Fusion or Island Umami
1 cup all-purpose flour
1 egg, beaten
1½-2 cups panko breadcrumbs
Oil for frying (Dad used peanut oil)
Dad's Island Katsu Sauce
1 cup mayonnaise
1 tbsp garlic aioli
2 tbsp Bachan's Japanese BBQ Sauce
1 tsp rice vinegar
1 tsp-1 tbsp Crystal Hot Sauce (adjust to taste)
½ tsp toasted sesame oil
1 tsp Dad's Seasonings Asian Fusion or Island Umami
For the Sandwich (pork katsu sandwich)
Brioche buns topped with roasted sesame seeds
Sliced cheese (optional)
Lettuce
Pickled red onion slices
Pickle slices
Banana pepper slices
Extra Katsu Sauce and BBQ Sauce (optional)
How to Make Dad’s Island Pork Katsu Sandwich
Make the Sauce
Combine all sauce ingredients in a bowl. Mix well and refrigerate until ready to serve.
Prepare the Cutlets (pork katsu sandwich)
Pat the pork or chicken dry with paper towels.
Season generously with Dad's Asian Fusion or Island Umami.
Add a small amount of the seasoning to the flour, beaten egg, and panko breadcrumbs for extra flavor.
Lightly coat the meat in flour, shaking off any excess.
Dip into the beaten egg.
Press firmly into the panko breadcrumbs until fully coated.
Place on a wire rack and rest for 10-15 minutes to help the coating adhere.
Fry
Heat oil to 350°F.
Fry the cutlets for 2-3 minutes per side, or until golden brown and cooked through.
Transfer to a clean wire rack and let rest for several minutes to maintain a crispy crust.
Build Your Sandwich (pork katsu sandwich)
Spread Dad's Island Katsu Sauce on the top and bottom buns. Layer with lettuce, the crispy katsu cutlet, cheese (if using), pickled red onions, pickles, and banana peppers.
